Can’t take your eyes off that holiday sweet?

From last weekend’s DEFINE foods workshop we learned about “better for you”  ingredients/substitutions for holiday recipes and desserts. Here is one of the festive treats we whipped up that is healthy, yet satisfying for that sweet tooth! An easy dish to take to a a family gathering or holiday party. Happy Holidays from DEFINE foods!

Snowball Truffles 

{Yield: 8-10}

3large dates, pitted

3 Tbsp Cacao powder

1 Tbsp palm sugar

2 Tbsp coconut oil, melted and cooled to room temperature

1/2 tsp vanilla extract

1 small Tbsp nut butter (cashew works well here)

pinch Celtic sea salt

1/2 cup coconut flakes, toasted

Place all ingredients in a food processor or Vitamix and blend until well combined and a dough-like texture has formed. Scoop small teaspoons into your hands and roll into individual balls. Place in the refrigerator to set. Allow to soften to room temperature before serving. Roll finished truffles into toasted coconut or cacao powder.
