Curried Winter Soup with Carrots and Butternut Squash

You’ve rehydrated and revived with DEFINE foods Juice but have you dined with it? In this recipe, Erin uses DEFINE foods GLOW Juice and other natural ingredients to create a Curried Winter Soup with Carrots and Butternut Squash.


{Yield: 2}

2 cups chopped butternut squash, peeled and steamed
1 cup DEFINE foods™ GLOW Juice
½ tsp curry powder
¼ tsp cinnamon
½ tsp sea salt
1 garlic clove, roughly chopped
pinch red pepper flakes
1 Tbsp lite coconut milk, plus more for garnish
fresh cilantro, for garnish

Place all ingredients in a blender or Vitamix and blend on high, until blended and heated through. Divide into bowls and garnish with a drizzle of coconut milk and fresh cilantro.
