Warm Autumn Salad with Pistachio-Cilantro Dressing and Granola Crunch

Just in time for Thanksgiving, we’ve found a surprising use of our recently launched line of DEFINE foods products. DEFINE foods Creator, Erin Stewart, uses our BALANCE Superfoods Granola snack in her Warm Autumn Salad with Pistachio Cilantro Dressing.

Ingredients
3-4 carrots, peeled and cut on a bias
1 cup Brussels sprouts, halved
1 large shallot, peeled and cut into wedges
2-3 beets, peeled and cut into bite-size pieces
2-3 Tbsp olive oil
1 Tbsp pure maple syrup
4-5 sprigs thyme, picked
sea salt & black pepper
pinch red pepper flakes
2- 3 ounces hearty greens, like arugula, kale or spinach
2 oz DEFINE foods™ BALANCE Granola

For the Dressing
1 bunch cilantro
2 garlic cloves
1 Tbsp lemon juice
2 Tbsp honey
3 Tbsp olive oil
¼ cup water
½ tsp ground cumin
¼ cup raw pistachios
sea salt & black pepper, to taste

Directions
Preheat the oven to 450 degrees F. Place the carrots, brussels sprouts and shallots on one rimmed baking sheet, and the beets on another. Drizzle both with olive oil, maple syrup, thyme, and sprinkle with red pepper flakes, sea salt and pepper. Roast in the oven for 30-40 minutes, until tender but crisp.

Meanwhile, to make the dressing, place all the ingredients in a blender and puree until smooth. Add sea salt and pepper, to taste.

The serve, toss the warm roasted root vegetables with the greens and place on a platter. Drizzle the dressing over the top, and sprinkle with DEFINE foods BALANCE granola as desired.
